Bombay Duck

The Bombay duck also commonly know as bombil, in Maharashtra is not a duck found in Mumbai but a kind of fish that you can see drying if you happen to drive by the hutments along the shores in Mumbai. The fish which is longish can be eaten fresh or even dried known as sukhaa bombil. While the fresh Bombay duck doesn’t have that strong a smell, the dried variety has a very strong smell.

Malabar matthi curry

The Malabar matthi curry is an Indian fish curry, that has Chinese roots. It is made of sardines semi-stewed in a Kerala-style curry with assorted vegetables, such as onions and okra and is served with naan, bread, tapioca or rice.The dish is most popular in Kerala and surprisingly is also popular amongst Singaporeans and Malaysians.

Chicken Chettinad

A chicken recipe that comes from the region of Chettinad, the Chettinad cuisine is basically the cuisine of a community called the Nattukotai Chettiars, or Nagarathars from the Chettinad region of Tamil Nadu. The Chettinad Chicken is usually made spicy.

Kalimpong cheese

This cheese is locally made in a small hill town of West Bengal called Kalimpong. Though Kalimpong is famous for the orchids grown there, it is also famous for the Kalimpong cheese. The Kalimpong cheese is a little like a rustic Welsh Caerphilly: white, slightly acidic and a little crumbly in the center with a relatively smooth rind that is yellow on the inside.
