Because of its medicinal values people even dry it in the sun and store it and use it whenever required.

Rukh Tamatar in the local language, literally means tree tomato. It is a bright red or golden egg shaped tropical fruit is tangy, sweet and somewhat like kiwi or passion fruit. Rich in vitamins, this tangy fruit can be eaten as a fruit too but tastes excellent when it is made into a chutney.

This trend, called the root to stem trend, is being enthusiastically promoted by the vegetarians and vegans across the globe. It is a super creative and interesting way to use a vegetable. This food trend was created keeping in mind that a couple of parts of the vegetable go waste during cooking. To prevent this, the trend was started. It was one of the hottest trends of 2018, and has become really popular now.

But the question is, how does one follow this trend?

Following the root to stem is pretty simple actually. Just use all the parts of the vegetable. Use everything in your cooking, from the stem, stalk, leaves, flowers, and of course the actual vegetable. Each part of the vegetable adds a new and distinct texture to your dish. The peels can usually be fried, and they make great crisps. For instance, you can fry your potatoes with the skin on. This makes them extra crispy. Other parts of the vegetable, say the stalk or stem, which cannot be directly used in cooking can be used a flavourful broth. For example, you can use the stems of vegetables like carrot, radish or even broccoli. As for the stalks, if you are afraid to eat them as they are, you can just sauté them and blend them. They make a great puree.

As for the nutritional benefits, this trend, makes sure that we receive and extract all the possible nutrients from a certain vegetable. Though we may not realize, the peels, stems or stalks are sometimes healthier and nutrient-dense than the vegetables themselves! We simply ignore and throw away the most nutritional parts of the vegetables.

You should definitely try out this trend, as its super easy to try out and adds not only nutrition, but also new and interesting textures to your dishes. You never know, your new favourite flavor may turn out to be that of a beetroot peel or a broccoli stem!

The valleys of Dalhousie are serene, calm, and full of a feeling of peace. Walking aimlessly on the roads of this beautiful hill station just awaken your tranquil side. Discovering the tiny streets here make your taste buds trickle, with the numerous roadside cafes and momo stalls, you can’t help but indulge in all these lovely delicacies here. In almost every second grocery shop, you see a hoarding which says ‘Fresh Chamba Chukh available here’. Well, the name sounds pretty intriguing, doesn’t it? So, I decided to try out this local delicacy of the Chamba region in Himachal Pradesh, the Chamba Chukh. And I absolutely loved it.

Now, what is this chamba chukh?

Chamba chukh is essentially a cooked red chilli sauce. It is prepared using chillies, citrus extract, some spices and mustard oil. The special thing about this sauce is that it is cooked using the local Chitrali chillies, which are a special variety grown in this region.

These locally grown Chitrali chillies are mixed with an extract from a local citrus fruit. Then, they are cooked down with Indian spices. Spices include hing (asafoedita), haldi, red chilli powder,aamchur and some salt. The local favourite, sarson or mustard oil is used for this recipe.

The traditional Chamba chukh is usually made using sun-dried red peppers which have a distinct smokey and spicy flavor, with a tiny hint of citrus in it. Since the chukh is getting popular day by day, new flavours are also coming up. Green chilli, ginger, garlic are some of the popular flavours.

The chukh is usually eaten as a condiment. It can replace a chutney or achar. You can also eat it as a sauce with momos, pakodas or crisps. It also makes a great marinade for paneer or chicken.

It has always been a staple, prepared by the women in their households in this region. However, as tourism in this region has grown, the Government has encouraged and promoted the product. Hence, it is finding its way into the local market.

The chamba chukh is definitely super spicy, smokey and fiery. But once you start, it is very difficult to stop eating it. It is really very addictive. I’m sure you’ll love trying this chilli sauce!

Who doesn’t like a luscious, creamy and perfect chocolate bar? Indulgent, decadent, attractive and simply delicious, chocolate is something we all love. We all are well-versed with the three types of chocolate-the super sweet white chocolate, the silky milk chocolate, and the bitter dark chocolate. We all have our own preferences when it comes to chocolates, the ones with a sweet tooth prefer the white chocolate, the most common in India is the milk chocolate, and the most unique and perhaps least liked is the bitter dark chocolate. But what if I were to tell you that there is a new type of chocolate which has been recently introduced? It isn’t brown, it doesn’t have a characteristic cocoa flavor, its rather a perfect blend of fruitiness and creaminess. It’s a pink chocolate, also called the Ruby chocolate.

When Was The Ruby Chocolate Born?

Ruby chocolate was introduced in September 2017, by the giant chocolate manufacturer, Berry Callebaut. The natural pink hue and unconventional flavor of the Ruby cocoa beans made it very attractive to the eye of the public. The Ruby cocoa beans give the chocolate its eye-catching pink colour. They aren’t a new type of cacao, rather come from the same species of cacao plant which we use to make the chocolate we already know. However, the flavour of the Ruby chocolate is said to be very distinct, and has little to none of the characteristic flavour associated with cocoa. It is said to be ‘sweet and sour’ and have a berry-like flavour, with little or no link to the usual cocoa we know. This ‘4th type of chocolate’ is fruity, creamy and smooth. Its something we can never think of!

How Soon Can We Eat This Lovely Chocolate?

Though the description of the flavours, colour and texture of the Ruby chocolate make our mouths water, it’s pretty long before we can purchase it easily from the market. Ruby chocolate is a new product, and its market availability is pretty low. The price is pretty high, and it is not easily available in all countries yet. Currently, a Ruby Chocolate Bar that weighs just 41.5G costs 4.90 dollars, i.e. Rs 350!

We can’t wait to satisfy our palettes with this unique flavour of chocolate!
